A Local Leader with a Heart for Hospitality and Community
Tom Boucher’s story is one of passion, perseverance, and purpose. As the CEO and founding partner of Great New Hampshire Restaurants, Tom has dedicated his life to building a restaurant group rooted in quality, community, and connection. From humble beginnings as a food server nearly 40 years ago at T-BONES in Hudson to leading a company that now includes eight restaurants, a commissary, a corporate office, and a charitable foundation.
Tom began his path at Merrimack College, graduating in 1987 with a Bachelor’s Degree. Though he was awarded a full academic scholarship to Villanova University, he ultimately chose a different route. He opted to stay in the restaurant business, a decision that would shape his career and the dining landscape in New Hampshire.
His first role at T-BONES in Hudson during a college holiday break quickly turned into a full-time passion. Over the next five years, Tom moved up the ranks, becoming general manager before co-founding Cactus Jack’s in 1995. He later took on marketing and operations leadership roles across the growing group of restaurants, and in 2004, he officially became CEO. Under Tom’s leadership, Great NH Restaurants expanded to include three distinct brands: T-BONES, Cactus Jack’s, and Copper Door, with locations across six New Hampshire communities: Bedford, Concord, Derry, Hudson, Laconia, and Salem. The company has doubled in size in number of restaurants and total revenue since then, and proudly employs 850 team members.
Tom, who resides in Bedford, NH, is known not only for his strategic acumen but also for his ability to cultivate long-lasting relationships with purveyors, farmers, business partners, and elected officials. His approach ensures that each restaurant operates with a strong sense of local pride and personalized service. In 2025, Tom and his team launched WeAreBetter.com, a website designed to highlight the little touches and behind-the-scenes efforts that set Great NH Restaurants apart from the competition.
Perhaps his most meaningful endeavor is the creation of FEEDNH.org, the charitable trust he launched in 2014. Short for Families, Elderly, Education, and the Disadvantaged, FEEDNH.org reflects Tom’s mission to give back to the communities that have supported the restaurants for decades. Since its inception, the organization has donated over $1 million to New Hampshire nonprofits, reinforcing the company’s values of compassion and community engagement.
At the core of Tom’s leadership is a simple but powerful vision: to create the premier restaurant company in New Hampshire for both guests and employees. Tom Boucher continues to shape not just the restaurant industry but also the communities that surround it.
