Green Chili Cheese Grits

Ingredients:
  • 1 box of chicken broth/ chicken bone broth
  • 1 ¾ cup instant grits
  • 1 stick of butter
  • 1 cup shredded cheddar cheese (or a blend: half cheddar or Monterey jack+ Velveeta works great)
  • 1 cup of diced green chiles (mild or hot, your preference). I like the “505 Southwestern” brand the best
  • 1 cup whole milk (for extra creaminess)
  • 1 tsp garlic powder
  • Optional toppings: crumbled bacon, extra cheese, chopped green onions
Instructions:
  1. In a medium pot, bring broth, butter, and garlic powder to a low boil/ simmer. Slowly whisk in the grits- stir constantly.
  2. Reduce heat to low, add milk slowly to thicken- add for thickness preference.
  3. Cook for 5 mins on the stove.
  4. Put in a 9x13 butter lined dish.
  5. Serve hot, topped with extra cheese, green onions, or bacon if desired.
  6. Add salt as desired.
  7. Enjoy!
