Green Chili Cheese Grits
Ingredients:
- 1 box of chicken broth/ chicken bone broth
- 1 ¾ cup instant grits
- 1 stick of butter
- 1 cup shredded cheddar cheese (or a blend: half cheddar or Monterey jack+ Velveeta works great)
- 1 cup of diced green chiles (mild or hot, your preference). I like the “505 Southwestern” brand the best
- 1 cup whole milk (for extra creaminess)
- 1 tsp garlic powder
- Optional toppings: crumbled bacon, extra cheese, chopped green onions
Instructions:
- In a medium pot, bring broth, butter, and garlic powder to a low boil/ simmer. Slowly whisk in the grits- stir constantly.
- Reduce heat to low, add milk slowly to thicken- add for thickness preference.
- Cook for 5 mins on the stove.
- Put in a 9x13 butter lined dish.
- Serve hot, topped with extra cheese, green onions, or bacon if desired.
- Add salt as desired.
- Enjoy!
