Laurica’s Apple Brown Betty

Baking this easy and delicious dish is like walking into a storybook kitchen where love and dessert are always in abundance. It’s the kind of scent that makes guests say, “It smells amazing in here—what are you baking?” 

Ingredients:
  • 2 Cups (Heaping) of crumbled/broken Ginger Snap cookies. Your favorite brand.
  • ¾ Brown Sugar or use ½ Cup Brown Sugar if you want it less sweet.
  • 2 Tablespoons Apricot Jam. Your favorite brand. You can use your favorite flavor instead.
  • 4 Small apples peeled and diced. Any variety.
  • 1 Teaspoon Cinnamon.
  • ½ Cup dried cranberries or raisins.
  • Zest and juice of 2 small oranges to equal ¾ cup. To make this easier you can use ¾ cup of your favorite orange juice.
  • 2 Tablespoons butter.
Directions:
1.Preheat oven to 350 degrees.
2.Using the 2 Tablespoons Butter, rub the bottom of a small glass baking dish or 8” pie pan. Leave remaining butter in chunks all over the bottom of the dish.
3.In a mixing bowl add all ingredients and stir with a spoon until mixed well.
4.Pour all ingredients into the baking dish.
5.Bake at 350 degrees until the apples are soft, approximately 40-45 minutes.
6. Serve with ice cream if desired.
