Ingredients
- 1 lb chicken breast
- 1 cup lemon juice
- ½ cup salt (for brine)
- Water (enough to cover chicken)
- 2 cups spinach
- 1 clove garlic
- ½ tablespoon each of:
- Salt
- Pepper
- Garlic powder
- Onion powder
- Paprika
- Parsley
- Italian seasoning
- 1 tablespoon oil (for skillet)
- ¼ cup cream cheese
- ¼ cup shredded mozzarella
- ¼ cup grated Parmesan
Preparation Steps
- In a bowl, brine your chicken with lemon juice, salt, and water. Let the chicken soak in the brine up to 24 hours.
- Sauté spinach with garlic until wilted.
- In a bowl, mix cooked spinach with cream cheese, mozzarella, Parmesan, and a pinch of salt, pepper, and paprika.
- Drain chicken and cut a pocket into the side of each breast.
- Season inside and out with all listed spices (½ tbsp each).
- Preheat oven to 350°F.
- Stuff each chicken breast with the spinach-cheese mixture.
- Heat oil in a skillet over medium-high heat. Sear chicken until golden brown on both sides.
- Transfer to a baking dish and bake for 15 minutes.
- Serve with your favorite sides and enjoy!
