A proud Hilltop resident, Mary is the founder and owner of Olive & Finch, a beloved local restaurant brand known for chef-driven, scratch-made meals served in welcoming, lively spaces. She also shares her culinary insights each month in Stroll Magazine with her column, Culinary Corner with Mary, giving readers approachable ideas for cooking at home and exploring Denver’s vibrant food culture.
Since opening the first Olive & Finch in 2013, Mary has built more than just a restaurant; she has built a community hub. She keeps prices accessible while delivering top-notch meals because, as she says, “I want Olive & Finch to be a place where anyone can enjoy great food in some of Denver’s best neighborhoods.” Her Cherry Creek location, conveniently close to home, has become a favorite stop for locals seeking brunch, coffee, or a casual dinner with friends.

Mary’s influence stretches across Denver. She shares approachable culinary ideas on Channel 9’s Colorado & Company with her segment Fresh Takes with Chef Mary, and Olive & Finch has earned multiple Readers’ Choice awards, including Best Brunch, Best Coffee, Best Happy Hour, and Best Chef in Denver.
Expansion has been intentional and hands-on. From Union Station to Denver International Airport and Little Finch at CSU Spur, Mary ensures each new location maintains the same warmth and quality her guests expect. “We stay close to operations, listen to our guests, and respond to every review,” she says.
Equally important to Mary is giving back to her city. She actively supports local businesses, co-founded a dining club to spotlight Denver restaurants, and mentors young women and entrepreneurs. “I care deeply about the community and want to help ensure the businesses we love thrive,” she says.
