Ingredients:
1.5 oz Thyme-Infused Aviation Gin (see recipe below)
10 whole black pepper kernels
1 oz grapefruit juice
0.5 oz lime juice
0.5 oz Simple Syrup
Sparkling water (to top)
Thyme-Infused Aviation Gin Recipe:
In a sealable container, add 1 bottle of Aviation Gin and a generous handful of fresh thyme sprigs. Seal the container and refrigerate for 24 hours to allow the flavors to infuse. After 24 hours, strain the gin back into its original bottle, discarding the thyme. Store the infused gin in the refrigerator for up to two weeks.
Method:
In a shaker tin, combine the thyme-infused gin, black pepper kernels, grapefruit juice, lime juice, and simple syrup. Add ice to the shaker and shake vigorously for about 15 seconds to chill the mixture and fully integrate the ingredients.
Once shaken, pour the entire contents of the shaker—including the black pepper kernels and ice—directly into a Collins glass. This “dirty dump” approach adds texture and visual interest to the drink. Top with sparkling water for a fizzy, refreshing finish.
Garnish with a fresh thyme sprig, gently slapped to release its aromatic oils, and place it on top of the glass. The herbal fragrance adds the perfect final touch to this balanced, citrus-forward cocktail.
