Stars, Stripes & Sweet Swirls Pie
A festive no-bake Fourth of July dessert bursting with creamy cheesecake filling, fresh berry swirls, and patriotic color in every slice.
Ingredients
For the Pie
- 1 pre-made graham cracker crust (store-bought or homemade)
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup heavy whipping cream
For the Red Swirl
- 1 cup fresh strawberries, hulled and chopped
- 2 tbsp granulated sugar
For the Blue Swirl
- 1 cup fresh blueberries
- 2 tbsp granulated sugar
Optional Garnishes
- Whipped cream
- Fresh strawberries
- Fresh blueberries
Directions:
1. Prepare the Berry Swirls- In a small saucepan, combine the strawberries and sugar. Cook over medium heat for about 5 minutes, until softened and syrupy. Puree until smooth and allow to cool completely.
Repeat the process with the blueberries and sugar. Puree and cool completely.
2. Make the Cream Filling: In a large mixing bowl, beat the softened cream cheese until smooth. Add the powdered sugar and vanilla extract, mixing until light and fluffy. In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated and smooth.
3. Assemble the Pie-Spread the cream cheese filling evenly into the graham cracker crust. Drop spoonfuls of the strawberry puree and blueberry puree over the top of the filling. Using a butter knife or skewer, gently swirl the colors together to create a red, white, and blue marbled effect.
4. Chill- Refrigerate for at least 4 hours, or overnight, until fully set.
5. Garnish & Serve- Top with whipped cream and fresh berries before serving. Slice, serve chilled, and enjoy a sweet taste of summer with family and friends.
